Storyville Themed Restaurant Now Open Inside B on Canal Hotel

“I’m not trying to reinvent the wheel,” said executive chef Andrew Mills when introducing his concept and menu at the newly opened Madam’s Modern Kitchen + Bar located at 1300 Canal Street.

The restaurant, menu, and decor are a nod to the history of the building and neighborhood as the former Storyville, the red light district of the city. Madam’s even offers a red light negroni as one of its signature cocktails.

“We want guests to immediately feel as if they stepped back in time by delivering an evocative experience from the restaurant’s decor and style to the food, drink, and entertainment,” explains Mills. “As a local myself, I envision this being a destination for hotel guests, but also a neighborhood mainstay offering an approachable menu that defines the ‘new style’ of Nola’s traditional cuisine.”

Mills, a New Orleans native, has lived and refined his culinary skills in New York, Los Angeles, and the Philippines. Most of the ingredients are sourced locally and throughout the gulf south, with hints of flavor from his travels, such as ceviche inspired by a spot in Redondo Beach, and coconut rice reminiscent of dishes he has tasted abroad.

The menu offers everything from local favorites such as oysters from Area 3 in Louisiana to mini foie gras mousse and adobo braised pork shank. Instead of bread, the team decided to offer guests popcorn sprinkled with creole seasoning to give it a kick.

Madam’s sits inside the B on Canal Hotel, which recently underwent a major renovation in what was once Hotel 504. Fort Lauderdale-based B Hotels & Resorts, which operates similar boutique hotels in Florida and Georgia, purchased the building and converted the 1930’s, 15-story building into the new hotel concept. The design renovation was led by New Orleans-based Holly & Smith Architects.

“It is a great time to be opening in New Orleans and having a presence in the center of it all has us very enthusiastic to introduce the B brand to the city,” said the hotel’s General Manager, Bruce Perone in a statement. “B on Canal evokes the charm of the city and provides guests with a unique food and beverage experience, offering a modern take on history that will leave a lasting impression.”
